Winter Solstice, Time to Thin the Onions!
We have the challenge of growing food all year long. That is the goal. No frozen food, no canned food, no dried food. Well, at least not too much. So this year I planted some onions and beets later in August and left them under the protection of cold frames. I never opened them except to water. It really seemed to help. Now, today, December 21st I will harvest the largest of the onions and allow the snow to cover the rest. My hope is most of the onions will survive and they will begin growing sooner next spring. They won’t have to wait for me to dig the soil and plant the onion sets. I have seen volunteer onions growing beneath the snow, like grass. They will be out there already, if they can survive the winter. We shall see. My goal is to be harvesting earlier and later each year, until finally the winter does not effect us. Or, for that matter the erratic weather patterns.
